Homemade Tortillas

Mix together:
  • 3 cups flour (mostly white) I used 1 cup spelt, 2 cups white.
  • 1 and 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup nutritional yeast
Cut in 1/4 cup canola oil or butter. I used oil. Then add 1 and 1/4 cups water. Knead for 3-5 minutes adding sprinkles of flour until no longer sticky. Let sit 5 minutes. Divide into equal pieces, (mine made 12) roll out flat (or use handy dandy tortilla press) and cook in pan.
Cook in a pan over medium-high heat for about 30 seconds to a minute per side.Wait until bubbles start to form.
Flip and cook on other side for same amount of time (or a little less) until it cooks through. I like to leave them a bit on the doughy side because they fold easier. The first ones got a little burnt but after turning the heat down a notch the rest were fine.
Of course I snacked on the very first one for "taste testing" purposes. With a tiny bit of whipped butter. :)This recipe makes a total of 12 tortillas at 157 calories each.
