Cranberry Nut Bread & Pumpkin Plum Nut Bread Recipes

Cranberry Nut Bread
Take 1 orange - grate the zest and squeeze out the juice - add more OJ to make 3/4 cup
.
In a mixing bowl, to the juice add:
1 beaten egg
2 tablespoons melted butter
.
Then add dry ingredients:
2 cups flour (can be part whole wheat and/or spelt)
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup sugar
.
Mix well then add:
3/4 cup chopped walnuts
1 & 1/2 to 2 cups of fresh cranberries, cut in half (a bag of fresh cranberries will usually make 2 loaves)

Spoon into a greased loaf pan.
Makes 1 large loaf. Bake at 325 for about an hour (test w/ toothpick)

Cool for at least 30 min. before removing from pan.

Pumpkin Plum Nut Bread

Mix together in large bowl:
1 & 2/3 cups flour (can be part whole wheat)
1 cup sugar
1/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. nutmeg
3/4 tsp. cinnamon
1/2 tsp. salt


Add to the dry ingredients:
1/2 cup oil
2 beaten eggs
2 cups mashed, cooked squash or pumpkin
1/2 cup chopped walnuts
Optional:1/2 cup chopped prune plums (use scissors to cut them up) or raisins or dates

Makes 1 large loaf. Grease and flour the pan. Bake at 350 for about an hour (test w/toothpick)

Cool for at least 45 minutes before removing from pan(It's delicious with almond butter!!)

    Thanks for the recipes-the cranberry bread looks especially good and I would definitely try it with part wholegrain. Both are really unique recipes, which is very cool.
