Ice Ice Baby

The high yesterday was 7 degrees. High, my @ss. I'm lucky enough to work inside all day while my poor husband has to work in & out of his shop in this cold weather fixing cars. Can you imagine how miserable it is bringing in a snow-covered car, putting it on a lift and working underneath it while it melts all over you??? His socks are soaked when he gets home every day.

I've been trying to move away from using my flash so much when taking breakfast and dinner photos. It's dark outside for both those meals (downfall of winter) so it's a little difficult to manage. Here was yesterday's breakfast:
Hard to tell what's what but this bowl had:
  • 1/2 cup oats
  • 3/4 cup water
  • half a naner
  • cinnamon
  • apricot jam
  • cashew butter

Mid-morning snack:My lunch was leftover roasted delicatta squash with hummus, a chopped bell pepper and an apple. I always have to have an apple with lunch, sorry if it's getting old but that's how it goes...

I didn't bring a knife so cutting the squash skin was really difficult - I just ended up ripping it in half and making a hummus & squash sandwich. I also added Cholula to it - I'm addicted to that stuff.

Afternoon snacks: Clif bar and sweet coconut thai tea with soy milk & stevia.

Piece of homemade bread w/almond butter and cinnamon.

For dinner I wanted to make something warm and comforting since it was so ridiculously cold out. I needed to use up some baby red potatoes and cabbage so after a little searching I found a recipe for Potato Cabbage Soup. The best part about the recipe? It called for the use of an immersion blender! I haven't really used mine yet, we got it as a wedding present.

It makes quite a few servings, I had a few ladles-full topped with some Cholula. I also had a second, unphotographed, smaller bowl with a piece of bread.
It was pretty garlicky but who cares, I'm married. Plus the hubs is eating this stuff too so we can stink together. :) Unfortunately, Dave didn't quite care for it so I now get all the leftovers. I cooked up a cubed chicken breast to throw into his bowl and all he had to say about the whole meal was, "The chicken's good" and "This is what people in nursing homes eat, isn't it?" Sad day.

In Other News: This morning it was negative 25 degrees. Seriously. Insane.So cold, even my poor Jeep was shivering.

  4. That is crazy weather make me feel so ashamed for even bitching that is 64 degree and I am feeling cold.
    I have to give you credit I don't think I will be able to wake up to go to work n that weather

  6. We're in a blizzard warning until Friday, so I hear ya. All I want to do is curl up at home on the couch with mass quantities of warm tea and comfort food. This stupid "work" thing that I hear of kind of gets in the way, but whatever.

    I'm with you on the warm foods! Hang in there!

  9. What's with this weather we're having...if we have one more day of weather in the single digits and my kids can't go out for recess I'm going to scream. It's so miserable.

    In other news, your soup looks fantastic, and there's nothing better than soup on a cold night. :-)

  12. yikes!! Stay warm, lady!!!!!!! I seriously love the way you eat!!! so wholesome and so fresh!!! bell peppers are my absolute FAVORITE.


    i am dying to get a hand blender someday too.
