Bits and pieces

It's still snowing. :(I took these photos at work - can anyone guess where I work by reading that slogan on the window??Breakfast yesterday was a tried and true blogger classic - the breakfast cookie. Once you get the hang of it it's pretty hard to screw up. Made with 1/2 cup oats, half a banana, flaxseed, cinnamon & a splash of soy milk. Topped with some Sunbutter and strawberry-rhubarb jam.
Mid-morning snacks: A small handful of almonds from my work stash and an apple.
I had some leftover Three Bean Chili and carrot sticks for lunch. It wasn't as filling as I'd hoped so I had a few more almonds to tide me over until I got home.
Afternoon snacks: Sandwich thin w/cashew butter & cinnamon.Babybel light cheese on the side. Love these little guys.Plus a couple dates w/Sunbutter.
For dinner I roasted a delicatta squash from my mom's garden and then filled 1/4 of it with some refried beans, cheddar cheese and Cholula. Great combination! I urge anyone to try this, I bet it would be good with most kinds of squash. (Yes, I ate the skin.)
I made sure my dinner was light so I could have dessert! I don't really eat traditional desserts that often, I normally just go for a date w/AB (or five) or some cereal but last night I really wanted cake. Not just any cake, my birthday cake!
You're probably thinking, "wait, she had a birthday??" No, my birthday was in June. But my husband baked me a cake as well as bought a store-made carrot cake so I wound up freezing most of the baked one. I had a chocolate craving like none other and searched the kitchen until I found a container filled with cake in the back of the freezer. I warmed a slice up in the microwave and then crammed it into my mouth. It wasn't too bad, a little dry though. But it solved my chocolate craving. :)

Question: Chocolate or vanilla? Chocolate.

    Freezing baked goods is a blessing. Otherwise I'd be compelled to eat about 2 dozen cookies in a weekend

    We saw a little snow on Saturday here but nothing like what you are seeing. I am not looking forward to real snow.

    I'm impressed that the cake held up so well in the freezer! I've never frozen a cake before so that's good to know! I'm vanilla!

    I found some brownies in the back of my fridge once that I had frozen 2 months before. They tasted like poo. I don't think that the container was as air tight as it could have been!
