Meal repeating

Good morning (or afternoon, depending on when you read this), are we all happy Friday is finally here? Can you believe Christmas is in two weeks? Or that I haven't bought one single Christmas present yet?!! Not good, Jessie. Not good. I'm such a procrastinator sometimes.

Let's refocus on something less stressful shall we? Breakfast! I had a bowl of oatmeal, oat bran, mashed banana & cinnamon topped with pom arils and some cashew butter. I love pomegranates but I swear, it can be such a battle to dissect them.
Mid-morning apple:
Am I the only one who keeps a knife at work?? We don't really have a "work kitchen", just a pile of plates, plastic utensils, a microwave and a sink. I keep my knife in my little cubby. Maybe that's why some of my male co-workers are so scared to piss me off. I'm a nice person I swear! I'm just a bit territorial in the office. Don't touch my machines. :)

Lunch: Carrot sticks with salmon, Spike & cottage cheese.
I cooked up a salmon fillet the day before so I could have a delicious protein-packed lunch.
I also think I may be the only cat owner who can leave a piece of salmon on the counter uncovered to cool without worrying about it getting stolen. My cats don't really like typical people food, with the exception of tuna water. My cat, Pepper, loves banana peels, apples and strawberries. My husband's cat, Vern, likes to eat feta cheese, carpet and hair. Do your pets like any strange foods?

If you can believe it, I didn't have any afternoon snacks. Crazy, right? Normally that's the time of day when my hunger goes through the roof and I can't stop eating. But I was nearly falling asleep in the car on my way home so the first thing I did (apart from starting a load of laundry) was take a much needed nap. So refreshing. I love naps!

After some blog reading and more laundry, I figured it was time to skip the snacking all together and just go straight for dinner. What did I decide on? Well, oatmeal of course. Twice in one day? Why not?
  • 1/2 cup oats
  • 1 cup water
  • cinnamon
  • flaxseed
  • brown sugar
  • raisins
  • apricot jam
  • walnuts
  • drizzle of maple syrup
There were a lot of great flavors in that colorful bowl and I enjoyed every single bite. I actually had to stop myself several times from just scarfing it down. I also gulped sipped on an iced soy chai with my breakfast-for-dinner.
What a great dinner, soul satisfying. :)

Dave got home late from work (again!) and I made him a loaf of garlic bread to have with some leftover chili. I may or may not have eaten a couple pieces and forgotten to take a photo. You can use your imagination for that one.

Hope your Friday is going well and someone please get my butt in gear and get me to go Christmas shopping. We don't even have a tree or any decorations up. Mr. and Mrs. Scrooge.

  1. I always crave oatmeal for dinner but I stop myself since I had it for breakfast. I should "treat" myself once in a while like you. BTW salmon on cottage cheese? interesting combo!

    I don't remember the last tie I had a salmon filet--that looks awesome

  3. My cat ate my husbands spaghetti once and she also eats bread, very unnormal for a cat:)
    That iced drink looks amazing, I've seen that chai stuff at Wal-Mart and thought about buying it, so glad you like it, need to try it now!

  4. protein packed lunch indeed! I never have tried salmon with cottage cheese but why not? I LOVE both so together this sounds greta! thanks for the idea girl!

  5. mmmm soy chai!! does your mix have caffeine in it? I havent bought any Christmas gifts yet either! I feel like the holiday is coming WAY too fast! I hope your having a great friday!!

  6. I don't keep a knife at work but when I travel for work I definitely bring one with me. I need to cut my apples!! Mmm, garlic bread!!

  8. i am a procrastination station as well! i cant believe xmas is SO CLOSE eep! haha~one thing about randy is the opposite foodwise, he eats ANYTHING but he will not eat popcorn. you put it in front of him and he wont even lick it. so weird. you know i love a protein packed meal~that one rocks! hope you have a great weekend girl :)
