Baked Oatmeal

Ingredients:

  • 1/2 cup old fashioned oats
  • 1/2 cup water
  • 1/2 cup almond milk (or milk of choice)
  • half a banana, mashed
  • vanilla extract
  • cinnamon
  • 1 T nut butter (can be baked in or spread on top)

Mix all together and pour into baking dish. Mixture will be runny.
 

Bake at 350 degrees for 30 minutes or until edges start to crisp up.

 
 

I like to whip up a "frosting" of sorts with plain Greek yogurt, cinnamon and a tablespoon of almond butter.

Frosted.

Makes one large serving.  Perfect for a weekend breakfast.
