Yesterday sure dragged on, although I did get to sleep in 45 minutes past my usual alarm. For breakfast I had a piece of millet toast with Sunbutter, an apple, some cheese & coffee with half & half.

Then I met my co-workers & manager along the Interstate at 7:15 so we could all ride together for the 90 minute commute to our training.
Eight hours of role playing, a soy latte, two pieces of pizza w/a small salad & another 90 minute commute back through Denver rush hour I made it back to my car at 7:00 pm. Exhausting. I also snacked on a mixed nut Clif Mojo bar on the way back.
Luckily I managed to find the energy to put together a smallish yet healthy dinner...

...and I also discovered that Sunbutter and dried apricots belong together. I had about 8 of these for dessert.
Workout: 2 miles on treadmill
My downstairs workout area is pretty cluttered right now with all the old furniture sitting in it. Therefore I have no room to do any of my workout videos so the treadmill or the bike are my only options until Saturday.
Sorry for the lackluster post - but it represents my Wednesday pretty accurately!
Sounds like a crazy day...glad you survived the lunch dilemma. Apricots + sunbutter sounds delish! I love your nails, by the way...do you do them yourself?

I'm sorry you had a crazy day. You did however, eat really well! You had good self control at lunch and had a good healthy dinner! Like you said in your last post it can be hard going out somewhere like that and eating healthy :)
