Breakfast was an egg sandwich on millet bread with some tomato slices and garlic herb laughing cow. The yolk ran everywhere once I popped it but it was oh so good.


What a cute little muffin container, I love my little 1/2 cup tupperwares. It held my almond butter stuffed No Carb Soy Muffin perfectly.
My packed lunch wins the prize for the most pathetic meal of the day. Obviously I was completely uninspired to prepare anything the night before. Either way it was tasty and got the job done.
Once I made my way home I greeted the kitties, changed into some comfy clothes and had a snack: another No Carb Soy Muffin with Mighty Maple for my sweet tooth.
Plus a small bowl of baby spinach with some egg salad, feta cheese and an olive oil/balsamic vinegar dressing. I've been craving egg salad for a while now so I made a small batch and used half on this salad - I'm already looking forward to eating the rest.
For dinner I made something new. I got this recipe for Taco Lasagna from Sweet & Savory. The husband loves any type of Mexican dish and I've been looking for a new way to make chicken. Win win. (Just typed wine wine...)



Workout: Warm-up on treadmill (less than .5 mile), balance ball DVD (somewhat lame) followed by a couple circuits from Jillian's No More Trouble Zones DVD.
Mid-morning snacks:
My plate with some green beans, feta cheese and sriracha.
Dessert was an apple which the husband promptly stole 1/3 of.

- Veggies: 4 servings
I empathize with your love of the sunlight. It was great finishing my yoga this morning as the sun came up!
ReplyDeleteThose muffins look good! I recently finished my jar of mighty maple and am sad that it's so far to get another one ... oh well. I still have a jar of dark chocolate dreams in the cupboard!
Good job on all the veg today - I've been trying to get more in my diet and I'm really liking it. Especially roasted veggies. Mmm. When I have them raw, I like something to dip them into - like hummus!

I always eat my egg sandwiches with a knife and fork because I NEED a runny yolk.

I have been craving eggs like crazy lately- I finally bought some to experiment with (never had them in the house before because I thought I didn't like them - now I can't get enough!)
