Zucchini Pancakes

Ingredients: Makes 4 pancakes
  • 2 eggs
  • 4 T flour
  • pinch of salt
  • 2 cups grated zucchini
Mix all together and cook in a greased pan over med-high heat. Cook for about 2-3 minutes each side.

Roasted garlic hummus is a good substitute topping (as shown above) but I prefer them stuffed with cottage cheese, fresh tomato slices and Spike.

    3. OMG....I just made this for breakfast, one GIANT pancake with a fried egg, hummus, avocado and hot sauce on top....it was mouthgasmic, thank you so much for the recipe! You rock!
