Ingredients: Makes 4 pancakes
- 2 eggs
- 4 T flour
- pinch of salt
- 2 cups grated zucchini
Mix all together and cook in a greased pan over med-high heat. Cook for about 2-3 minutes each side.


Roasted garlic hummus is a good substitute topping (as shown above) but I prefer them stuffed with cottage cheese, fresh tomato slices and Spike.
Look delicious! I love zucchini bread so I bet I'd love these! You could even do banana, cinnamon, and nutmeg! Love the new layout by the way :)

ReplyDeleteOMG....I just made this for breakfast, one GIANT pancake with a fried egg, hummus, avocado and hot sauce on top....it was mouthgasmic, thank you so much for the recipe! You rock!
