Buttermilk Biscuits

This is my mom's recipe so I can't take much credit for it but if you're not afraid of butter these are a fantastic brunch or dinner addition. Fluffy and light with a creamy texture - I can just eat them as is and be completely satisfied.
If you can't read that card, the ingredients are:
  • 2 1/2 cups flour (I used a half cup of whole wheat and the rest white)
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp sugar
  • half stick butter (I was an idiot and read "stick butter" so I used a whole one!!)
  • 1 cup buttermilk
Preheat oven to 425 degrees and grease pan. Makes about 1 dozen biscuits.

Chop half a stick of butter (or a whole one if you're illiterate like me) into pieces, gather all dry ingredients.
Combine butter, flour, baking soda & powder, salt and sugar together in a bowl. Mix well. Add one cup buttermilk. If the mixture is too wet add more flour. If it's too dry, add some water.
Knead bread on a floured surface and roll out to about 2/3 inch thick. Cut out with a biscuit cutter or a small glass.
Bake for 12-15 minutes.

  2. Yum! I would try this. And half a stick of butter over 12 biscuits isn't that much at all--a teaspoon a person. I wonder if they'd work with a gluten free flour like cornmeal, or just spelt flour

  3. i LOVE buttermilk biscuits! i have never tried making them myself, but now that i have means to a recipe, maybe i will give it a shot!
