Chocolate Zucchini Cake

It's about time I shared this recipe. This is my all time favorite cake, recipe courtesy of my Mom.

Ingredients:
  • 1/4 cup butter, softened
  • 1/2 cup oil
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/2 cup buttermilk
Mix all ingredients together until smooth.
Then add in:
  • 2 1/2 cups flour (I used half white/half wheat)
  • 4 tablespoons cocoa
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp baking powder
  • 3 cups grated zucchini
Pour into a greased 13" x 9" pan.

Liberally sprinkle milk chocolate chips across top of cake, about 1 cup.

Bake at 350 degrees for 40 minutes or until a toothpick inserted into center comes out clean.

Every person I make this for is a bit skeptical about the added zucchini but I promise it makes for the moistest, softest, melt-in-your-mouth cake you have ever tried. MAKE IT NOW! You will not regret it. But I will warn you, it makes a fantastic breakfast as well as a dessert so you will eat it twice as quickly.
