Summer Squash Casserole




This is one of my favorite dishes to bring to a potluck or BBQ - it's extremely easy to prepare and always gets rave reviews.  Of course they're mostly from my husband....

Ingredients:
  • 6 cups yellow squash, sliced
  • 1/4 cup onion, chopped
  • 1 cup carrots, grated
  • 1 cup sour cream (I used a small container of non-fat Greek yogurt)
  • 1 can condensed cream of chicken soup
  • 1 package Stove-Top stuffing
Begin by boiling squash and onion together for 5 minutes.  Drain.  In a separate bowl combine carrot, sour cream (or yogurt) and cream of chicken soup.  Add squash mixture to bowl and stir well.

Prepare stuffing according to package directions.

Layer in a casserole dish in alternating layers with the last of the stuffing on top.

Bake at 350 degrees for 45 minutes - serve hot.
