- 1# ground beef
- 1 jar spaghetti sauce
- 1 can chopped tomatoes
- 6 lasagna noodles (I prefer whole wheat)
- 2 small zucchini
- 6 large mushrooms
- small container of cottage cheese
- Romano cheese
- 1 cup shredded mozzarella cheese
- Italian seasonings (I used a blend of basil and oregano)
Preheat oven to 350 degrees.
1) Boil water in a large pot, add 6 noodles and cook according to time on box.
3) Mix spaghetti sauce and canned tomatoes together in a large bowl, add a sprinkle of Italian seasonings. Add meat to sauce.
4) Slice mushrooms and zucchini. Make sure to cut the zucchini lengthwise (to resemble noodles)
5) Mix cottage cheese, 1/4 cup Romano cheese and Italian seasonings together in a bowl. Blend with an immersion blender (or whisk until smooth).
6) Layer in a 9" x 12" pan starting with sauce on bottom and ending with sauce and mozzarella cheese on top.
Bake for 45 minutes at 350 degrees.
