Chickpea Blondies



Ingredients:

  • 1 can chickpeas (15 oz)
  • 2 eggs (or 3 egg whites)
  • 1/3 cup oat flour (ground up whole oats)
  • 1/2 cup flax meal
  • 2 T canola oil
  • 1 tsp vanilla
  • 1 tsp b. powder
  • 1 tsp cinnamon
  • pinch of salt
  • 1/4 cup agave nectar
  • 2 T almond butter
  • 1/2 a banana
Drain and rinse chickpeas.  Blend with eggs (or egg whites) in food processor.  Mix in all other ingredients, stir well to combine.  Grease an 8 x 8 pan and bake for 20 minutes at 350 degrees or until a toothpick inserted into center comes out clean.


Cool for 10 minutes, cut and serve!

These are more muffin/bread like than a dessert item.  You could make them sweeter with more agave or some brown sugar but I like the versatility of being able to eat them with nut butter and yogurt or with some soup.
