Makes 4-6 servings. Bake at 350 degrees for 30 minutes.
Ingredients:
- 6 large tortillas
- 1 16oz jar of red chili enchilada sauce
- 1 can of green chilis
- 1 can of refried beans
- ~3 cups shredded cheddar cheese
- 1/2 pound ground beef
- spices to taste (I used garlic, cayenne pepper, salt & pepper)
Combine beef, beans, green chilis and spices.
Pour some sauce into the bottom of your pan to prevent the enchiladas from sticking.
Lightly coat your tortillas with sauce as well.
Pour remainder of sauce on top and sprinkle liberally with cheese.
Pop them into the oven at 350 for 30 minutes, let cool and enjoy!
