2010 In a Nutshell

January - After a full year of tracking my food and exercise, I started a New Way of Thinking and stopped being so obsessive about every single thing I ate.  This was one of the BEST decisions I have made in a long time!

I also did a "flashback" to Dave and I's 2008 engagement in Cabo San Lucas!

February - I went to Hawaii with my mom and house-sat for a week.  You can read all the recap posts here, here, here (just found out that the dog in this post recently died), here (my first time taking a yoga class), herehere (where I stepped on a snail!) and here.
My husband also took me on a surprise trip to Indian Hot Springs in Idaho Springs, Colorado for Valentine's Day.

March - Hmmm....not much happened in March.

April/ May - These were a couple of very hard months for me.  I was diagnosed with thrombocytopenia, as well as h. pylori.
There were some good times though, we went to Vegas for our one-year wedding anniversary and I had my first blogger meet-up with Diana from My Marble Rye!

June - I turned 25 and my dad visited.  We went out for breakfast at Snooze (best pancakes EVER).

Also - my favorite summer event: BREWFEST!

July - I made chia pudding for the first time and spoke of the benefits of chia seeds in another one of my most-read posts.

August - One of my favorite posts about a trip to Nebraska to obtain the beef that we eat all year long.

September - I posted about My Skincare Routine and we went to Boston (Days One, Two and Three).

October - On 10/20/10, my godson Wyatt was born!

November - I wrote about my top 5 health secrets that surprisingly, have nothing to do with a specific diet or a certain amount of exercise.

December - My husband gave me the MOST AMAZING, WONDERFUL, FANTASTIC Christmas present ever!!!  My dream car....

How many states have you been to?  This year I added Hawaii and Massachusetts to my current list of: Colorado, Wyoming, Nebraska, Iowa, Nevada, Utah, California, South Dakota, Texas, New York and Pennsylvania.  Which makes a total of 13 states at the age of 25.  Dave and I have made it our mission to see every state before we start travelling overseas so here's to 37 more states!!

Lazy Eggs and Two Years

Lately, it's been getting a little more difficult to eat breakfast before I leave for work at 6 am.  I used to just scarf down my meal and suffer the stomach pain that followed.

Not any more.

I'm making it my mission to fully enjoy each meal/snack/bite I eat and it's pretty hard to do that in 5 minutes, while putting on shoes and packing my lunch.

Each morning I bring something different to prepare at work.  Today's concoction?

Lazy eggs.
Lazy = microwave.  Take two eggs, some cheese, a handful of spinach and a dab of butter.  In a microwave safe container, nuke for 2.5 minutes, stirring every 30 seconds.  (Yes, I know, I microwaved plastic....do what I say, not what I do.)
 Voila!  Lazy eggs.
Other (BPA-free) breakfasts have been of the yogurt variety.  I'm still loving the Greek yogurt, pomegranate and almond butter combo.
But for some reason my taste for all things nut butter has significantly decreased.  I used to go through a jar a week.  But now?  Maybe a tablespoon or two.  Not sure what's up with that...

I have, however, been stuffing my face nibbling on the best almond toffee in the world - Enstrom's.  I get a box from my parents every Christmas and I try to make it last as long as possible....you know, like until January.
In other news - today is my 2 year blogging anniversary!  I wanted to do something fun like a recap of my first post but, um.  I deleted it.  I know, I suck.  Oh well, it was all about tea and the fact that I like oatmeal but don't know how to make it not runny.  Luckily I have perfected my oatmeal and I still love tea!!


Question - How do you like your eggs?  I've been eating mine scrambled because I'm in a phase where runny yolks ick me out...

A Dream Come True

It all started about 10 years ago.

Around the age of 15, I had a high school teacher who was in the United States Army.  One day, he drove a military-issued Hummer to school.  I had never seen anything like it.  It was beautiful and I found myself completely in awe.  Each of my classmates and I took turns exploring the inside and sitting behind the wheel.  I felt invincible sitting in that beast.  The seed was planted.  Someday, I said to myself.

A couple years later, in 2002, GM came out with the colorful, shiny, new H2 version, I again, fell head over heels.  Most of my friends and family members probably thought I was crazy, but I couldn't help it.

This was taken the winter of 2003, I was 18.
The obsession followed me to college and beyond, where I told anyone who would listen about my "dream vehicle".  Boyfriends gave me little Hummer ornaments and Hummer bumper stickers.  My husband gave me a remote control H2 when we were dating.  He thought it was the weirdest thing that out of all the vehicles on the road, I only wanted a Hummer.

Then, in 2005, the H3 came out.  It was smaller and more compact than the H2.  Not quite as puffed up, it still had that tank-like appeal that I so much adored.  It was lust at first sight.  Not only was it easier to drive and park, it also got better mileage than it's predecessors.  Unfortunately, it came at a cost.  While the H2 boasted a V8 under the hood, the new H3's came equipped with a pitiful 3.5 liter engine putting out a measly 220 horsepower.  Not exactly beastly.


Luckily, in 2008, a new H3 arrived on the scene.  The Alpha.
Finally packing a V8 with an acceptable 300 horsepower - the HUMMER dream was back in full force.

This Christmas, my husband and I went car shopping...
Finally, after 10 years of wishing and wanting - my dream came true.
