Carrot Cake with Easy Cream Cheese Frosting

Got carrots and cream cheese??  Good, you're halfway there.  What about a husband who has been hounding you for carrot cake??  Great - now you have the motivation (and the promise that you won't be the only one eating this!)
 


Carrot Cake (recipe courtesy of Mama Grazer)

Dry Ingredients:
  • 2 cups flour
  • 1.5 cups sugar
  • 1 tsp b. soda
  • 1 tsp b. powder
  • 1 tsp salt
  • 1 tsp cinnamon
Wet Ingredients:
  • 1 cup canola oil
  • 3 cups grated carrots
  • 4 eggs
Add wet ingredients to dry - mix well.  Pour into a greased 9 x 13 inch pan and bake at 350 for 40 minutes.  Let cool completely before frosting or you will wind up with a mess....trust me, this isn't my first rodeo.

Now for the part most of you have been waiting for: the cream cheese frosting.  This is the best frosting I have ever had.  My mom spoiled me with this simple recipe and it's the only type of frosting I will ever make for my own children.
Easy Cream Cheese Frosting

  • 1 eight ounce block of cream cheese
  • 2 T butter
  • 1/4 cup honey or maple syrup
  • powdered sugar to taste (depends on how sweet you like it)

I went to the restroom and someone went after my cake before I was done taking photos....

Turns out, he had the right idea.  Perfect afternoon snack.

  4. I'm bookmarking this. I want carrot cake and have most of the ingredients at home- but I need baking soda since I only have powder...is this required?

  5. Carrot cake is one of my absolute favorite desserts and as silly as it sounds I always make it around Easter, like because bunnies eat carrots:)
