Got carrots and cream cheese?? Good, you're halfway there. What about a husband who has been hounding you for carrot cake?? Great - now you have the motivation (and the promise that you won't be the only one eating this!)
Carrot Cake (recipe courtesy of Mama Grazer)
Dry Ingredients:
- 2 cups flour
- 1.5 cups sugar
- 1 tsp b. soda
- 1 tsp b. powder
- 1 tsp salt
- 1 tsp cinnamon
- 1 cup canola oil
- 3 cups grated carrots
- 4 eggs

Now for the part most of you have been waiting for: the cream cheese frosting. This is the best frosting I have ever had. My mom spoiled me with this simple recipe and it's the only type of frosting I will ever make for my own children.Easy Cream Cheese Frosting
- 1 eight ounce block of cream cheese
- 2 T butter
- 1/4 cup honey or maple syrup
- powdered sugar to taste (depends on how sweet you like it)

ReplyDeleteCarrot cake is one of my absolute favorite desserts and as silly as it sounds I always make it around Easter, like because bunnies eat carrots:)
