she looks like she has such a cute little personality already!!! Sooo cute!!! anyways, maybe cut the pork chops thinner? It's REALLY easy to overcook them...i usually salt, garlic, and pepper them then broil them http://www.howtocookmeat.com/recipes/pork/broiledporkchops.htm

and you can probably do fantastic things to them with apples!
