It's amazing how the little things make your life that much easier! I use coconut oil in place of olive oil. Just a teaspoon or so and let it melt in the pan kind of like butter. It doesn't taste coconutty. Ohh! I just read Evan's comment and I am totally doing the baking with coconut oil thing. Because of the higher saturated fat (the good kind)content of the oil, it maintains its integrity and bond structure longer than oils that remain liquid at room temperature.
