  • 10-12 fresh green chilies, roughly chopped
  • 4 shallots, peeled and roughly chopped
  • 4 cloves of garlic, peeled
  • 1 small bunch of fresh cilantro, leaves and stems, roughly chopped
  • 1 stalk of lemongrass, outer leaves removed and roughly chopped
  • 1/2 teaspoon of shrimp paste (optional)
  • 1 tablespoon of vegetable oil
  • 1 tablespoon of fish sauce
  • 1 tablespoon of palm sugar (or substitute with brown sugar)
  • 2 tablespoons of freshly squeezed lime juice
  • Salt and pepper, to taste
