Creamy Sisig with Mayonnaise is a twist on the classic Filipino sisig dish, featuring the addition of mayonnaise for a creamier and richer taste. This indulgent and satisfying meal is perfect for those who are looking for a unique and flavorful dining experience.


  • 1 lb pig's head or pork belly, boiled and chopped
  • 1/2 cup pig's liver, boiled and minced
  • 1/2 cup mayonnaise
  • 1/4 cup soy sauce
  • 2 tbsp calamansi juice (or lemon juice)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2-3 green chilies, chopped
  • 1/4 cup butter
  • Salt and pepper, to taste
  • 1 egg, for topping (optional)
  • Green onions, chopped for garnishing


  1. In a large mixing bowl, combine the boiled and chopped pig's head or pork belly with the minced pig's liver.
  2. Add the soy sauce and calamansi juice to the meat mixture. Mix well to ensure that the flavors are evenly distributed. Allow the mixture to marinate for at least 15 minutes.
  3. In a large pan, melt the butter over medium heat. Sauté the garlic and onions until they become fragrant and translucent.
  4. Add the green chilies to the pan and continue sautéing for another 2-3 minutes.
  5. Pour the marinated meat mixture into the pan. Cook for 10-15 minutes, stirring occasionally to ensure even cooking.
  6. Once the meat is cooked, reduce the heat to low and add the mayonnaise. Mix well until the mayonnaise is fully incorporated and the sisig has a creamy consistency.
  7. Season the sisig with salt and pepper according to your taste preferences.
  8. If desired, crack an egg on top of the sisig and cover the pan with a lid. Allow the egg to cook for 2-3 minutes, or until the whites are set and the yolk is still runny.
