This traditional dish is made with thin cuts of beef, usually skirt steak, and is cooked with a variety of flavors to create a mouthwatering meal that will have your taste buds dancing. In this Walmart guide, we’ll walk you through the process of making sabana de res at home, so you can enjoy this tasty dish without having to leave your own kitchen.

Choosing the Right Cut of Beef

The key to a successful sabana de res is choosing the right cut of beef. Skirt steak is the most popular choice, as it’s tender, flavorful, and easy to cook. Other cuts that can work well include flank steak, sirloin beef steak, and chuck steaks. Be sure to choose a thin cut, as this will ensure that the meat cooks quickly and evenly.

Preparing the Beef

Before cooking your sabana de res, it’s important to prepare the meat by tenderizing it. This can be done by pounding the beef with a meat mallet or using a fork to pierce the meat all over. This will help to break down the muscle fibers, resulting in a more tender end result.

Marinating the Beef

For the best results, marinate your beef before cooking. A simple marinade of lime juice, soy sauce, minced garlic, and a pinch of salt and black pepper will add a delicious flavor to your sabana de res. Allow the meat to marinate for at least 30 minutes, or up to overnight in the refrigerator for maximum flavor.

Cooking the Sabana de Res

When you’re ready to cook your sabana de res, heat a tablespoon of oil in a large skillet over medium heat. Cook the beef for about 2-3 minutes per side, or until it reaches your desired level of doneness. Be sure not to overcrowd the pan, as this can cause the meat to steam rather than sear.

Serving Suggestions

There are many different ways to enjoy your sabana de res. For a traditional Latin American dish, serve the cooked beef with corn tortillas, pico de gallo, and a side of Mexican red rice. You can also make a delicious sandwich by placing the beef on a warm roll and topping it with chimichurri sauce, lettuce, and tomato. Or, for a low-carb option, serve the sabana de res on a bed of lettuce with avocado and a squeeze of lime.

Storing Leftovers

If you have any leftover sabana de res, store it in an airtight container in the refrigerator for up to 3 days. To reheat, simply heat a tablespoon of vegetable oil in a skillet over medium heat and cook the beef until warmed through, about 2-3 minutes per side.

Experiment with Flavors

Don’t be afraid to get creative with your sabana de res recipe. Try adding different cuts of beef, seasonings, and vegetables to create a unique flavor profile that suits your tastes. Some popular additions include bell peppers, red sweet pepper, and freshly ground ancho chili pepper.

Ingredients

  • 1.5 lbs (700 g) beef sirloin or flank steak, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup (60 ml) olive oil, divided
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 large tomato, finely chopped
  • 1/4 cup (60 ml) Worcestershire sauce
  • 1/4 cup (60 ml) soy sauce
  • 1/4 cup (60 ml) fresh lime juice
  • 1/4 cup (60 ml) white wine or white wine vinegar
  • 1/2 cup (125 ml) beef broth
  • 1/4 cup (60 ml) chopped fresh cilantro
  • 1 medium avocado, sliced (optional)

Instructions

  1. Lay the thinly-sliced beef on a cutting board and season both sides with salt and freshly ground black pepper. Set aside.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once the oil is hot, add the thinly sliced onion and garlic. Sauté for about 5 minutes, or until the onion is softened and slightly translucent. Remove the onions and garlic from the skillet and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of olive oil. Add the seasoned beef slices and cook for about 1-2 minutes on each side, or until browned. Remove the cooked beef from the skillet and set aside.
  4. In a small bowl, combine the Worcestershire sauce, soy sauce, lime juice, and white wine (or vinegar). Mix well.
  5. Return the onions and garlic to the skillet, and add the chopped tomato. Cook for 2-3 minutes, stirring occasionally.
  6. Add the sauce mixture and beef broth to the skillet, stirring to combine. Bring the mixture to a simmer and cook for 5 minutes.
  7. Return the cooked beef slices to the skillet, nestling them into the sauce. Cook for an additional 5 minutes, or until the beef is cooked through and the flavors have melded together.
  8. Remove the skillet from the heat and stir in the chopped cilantro. Taste and adjust the seasoning with more salt and pepper, if needed.
  9. Serve the sabana de res over white rice or with warm corn tortillas. Top with avocado slices, if desired, and enjoy a taste of Mexico in your own home!

Notes

For an extra kick, add 1-2 chopped jalapeños or serrano peppers when sautéing the onions and garlic. You can substitute the beef with thinly-sliced chicken or pork for a different take on this classic dish.
