The Magic Ingredient: Aji Amarillo

The key ingredient of our star recipe is the Aji Amarillo peppers. These yellow peppers are a staple in Peruvian sauces, adding a distinct fruity, medium heat to dishes. If you can’t find fresh Aji Amarillo peppers, you can also use Aji Amarillo paste, which is readily available in Latin markets or online.

The Fascinating Aji Verde

An interesting fact about Peruvian green sauce, or Aji Verde, is that it doesn’t actually contain any green chili. Instead, it’s the black mint, or Huacatay, that gives the Aji Verde sauce its green hue and unique flavor. This sauce is also quite popular in Peruvian restaurants, often served with rotisserie chicken and french fries.

La Brasa: Peru’s Best Chicken

La Brasa, a style of preparing whole chicken, is considered to be one of the best chicken dishes in Peru. The tender chicken, marinated in soy sauce, garlic, and secret spices, is typically served with Aji Amarillo sauce, making it a perfect accompaniment to our Peruvian chicken yellow sauce recipe.
