Keto Beef and Broccoli Casserole
This flavorful casserole is low in carbs and packed with delicious beef and broccoli. It's a perfect dish for your keto-friendly food blog.
Ingredients
- 1.5 lbs (680g) beef sirloin, thinly sliced
- 4 cups broccoli florets
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup heavy cream
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Add the beef slices to the skillet and cook until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and sauté the onion and garlic until softened and fragrant.
- Add the broccoli florets to the skillet and cook for about 5 minutes until slightly tender. Remove from heat and set aside.
- In a mixing bowl, combine the beef broth, heavy cream, cream cheese, Parmesan cheese, Dijon mustard, Worcestershire sauce, dried oregano, dried thyme, salt, and pepper. Mix well until smooth and creamy.
- In a greased casserole dish, layer half of the cooked beef slices on the bottom.
- Spread the cooked broccoli and onion mixture evenly over the beef.
- Pour the creamy sauce mixture over the broccoli layer, ensuring it covers the entire dish.
- Place the remaining half of the beef slices on top of the casserole.
- Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes.
